Southwest Style Mashed Potatoes

Mashed Potatoes with a southwest twist

  • 2 Large Potatoes
  • 4 cups water
  • 2/3 cups Pico de Gallo
  • 2/3 cups Ranch Dressing Light


  1. Peel Potatoes and chop into small chunks

  2. Put the potatoes into the Instant Pot and add the 4 cups of water. (If you did more than two potatoes, add more water, but do not go over max fill line)

  3. Put the lid on the Instant Pot and seal it. Make sure the valve is set to seal and not vent. 

  4. Set the Instant Pot to the manual setting (or pressure cook depending on model) and set the time for 8 min

  5. Once the time is done, do a quick release for the pressure and empty the pot of potatoes into a strainer.

  6. Return the potatoes to the pot after straining and add in the Pico de Gallo and Ranch

  7. Using a large fork or masher mix the ingredients to your preferred consistency 

  8. Your dish is now ready to serve! Enjoy!

Recipe Notes

For a bold flavor increase the amount of Pico to a full cup and choose a spicier blend!
