Yep! You read that right! One less pot to clean and one less step to do in making mashed potatoes. I get away without boiling water because I cook the potatoes in an Instant Pot. Instead of using gravy, this recipe uses fresh Pico de Gallo (we use hot, but you can choose your spice level) and ranch dressing. I know it sounds like a strange combination, but I promise your taste buds with thank you!
Not to mention, it adds one more way to make mashed potatoes without getting too routine on meals. I am all for easy dinner meals, but switching up the flavors so my family doesn’t get bored.
With this Instant Pot recipe, there is no overspill, no mess, and only one pot to clean after. Let me repeat that…..ONE pot to clean! Usually, I pair this with baked seasoned chicken, so really its one pot and a pan. Even then I line the pan with foil, so I don’t have to clean the pan unless I still manage to get it dirty.
This side dish recipe is for a family of four, but can easily be adjusted. As well as the amount of Pico de Gallo and Ranch. It really depends on your taste preference. I tend to go heavy on the Pico, it is technically all veggies so that makes it healthy…right?

Mashed Potatoes with a southwest twist
- 2 Large Potatoes
- 4 cups water
- 2/3 cups Pico de Gallo
- 2/3 cups Ranch Dressing Light
Peel Potatoes and chop into small chunks
Put the potatoes into the Instant Pot and add the 4 cups of water. (If you did more than two potatoes, add more water, but do not go over max fill line)
Put the lid on the Instant Pot and seal it. Make sure the valve is set to seal and not vent.
Set the Instant Pot to the manual setting (or pressure cook depending on model) and set the time for 8 min
Once the time is done, do a quick release for the pressure and empty the pot of potatoes into a strainer.
Return the potatoes to the pot after straining and add in the Pico de Gallo and Ranch
Using a large fork or masher mix the ingredients to your preferred consistency
Your dish is now ready to serve! Enjoy!
For a bold flavor increase the amount of Pico to a full cup and choose a spicier blend!
