I don’t know about you, but I definitely jumped on the instant pot bandwagon last year and I couldn’t be happier. Especially when it came to chicken recipes, I freaking love chicken!
I will be honest and say that it took me a while to really start using it for everything. Mostly since I was still being lazy and eating out often. That all changed once I had a kid and became a SAHM.
Now? I’m like a self-proclaimed instant pot queen! Ok, maybe not a queen yet, but I do use the shit out of my instant pot. And not just for chicken…promise haha!
Anyway, like I said I LOVE chicken, but getting creative with cooking this bird can be tricky sometimes and you definitely don’t want dinner to become bland and redundant.
Enter THE LIST!
I created a quick little list or guide of the top 14 chicken meals that not only taste great but are quick and easy to cook. AND the meals are light on the wallet, which is always a win in my house.
The instant pot chicken recipes are divided into chicken breast recipes, thighs, pasta, and stew.

Instant Pot Chicken Breast Recipes
Parmesan Garlic Chicken– This recipe is an easy 16-minute meal. (6 minutes cooking plus 10 minutes of natural release time) The recipe even includes how to make it with fettuccine noodles if you choose.
Chicken Teriyaki Bowls– an all-in-one dinner that’s ready in minutes and healthy. I like this homemade Asian recipe because it’s easy and low in sodium as compared to many take-out options.
Pepper Jack Chicken– a cheesy low carb meal that is full of flavor and fast to make! While I love spicy food, this recipe is light on spice. It gives the chicken just enough bite to not be bland and boring.
Chicken Pot Pie– First of all, who doesn’t like chicken pot pie? There are tons of recipes for it out there, but this one does not require you to thaw the chicken! Woohoo, less prep time!
Lemon Chicken– This is not your ordinary lemon seasoned chicken. Instead, this recipe will produce juicy, tender chicken smothered in a lemon parmesan cream sauce. I know sounds delicious right? Trust me it is! Her recipe even includes ideas on what sides complement this dish best.
Shredded Mexican Chicken– instant pot recipes already making cooking super fast and easy. However, you can find some recipes that are even easier! They are called “dump” recipes, meaning you dump all the ingredients in the pot, close the lid and forget about it until it’s done. This shredded chicken one is of my top 5 dump recipes. Definitely worth a try when you have a busy evening.
Chicken Taco Bowl– “bowl” meals are great because it includes your protein, veggies, and grain all at once. Not extra cooking for sides. One pot and done! The taco bowl is also a hit with the younger eaters. Not too heavy on any sort of spice, so it’s perfect for even the pickiest people.
Instant Pot Chicken Thigh Recipes
Chicken and Dumplings– While the recipe prefers thighs, chicken breast can be used instead. Either way, this recipe is so good, its almost as if grandma made herself.
Brown Sugar Garlic Chicken– this fall of the bone recipe is not only fast (10 minutes cook time), it’s easy in terms of what’s needed. Chances are you already have most if not all the ingredients in your spice cabinet.
Chicken Pasta Recipes
Tuscan Chicken Pasta– forget going out to Olive Garden, this pasta recipe puts theirs to shame. The sun-dried tomatoes really give it that added pop of flavor!
Pesto Chicken Pasta– pesto has become one of my favorites! Not too heavy on the creamy sauce, but gives your chicken pasta so much flavor it will be hard to refuse getting seconds. It also reheats well, which makes having it for lunch the next day perfect!
Chicken Fajita Pasta- I have made this recipe several times. One this I will say is go easy on the fajita seasoning, a little goes a long way! Other than that, this southwest dish is a party in the mouth.
Buffalo Ranch Chicken Pasta– earlier I mentioned I love spicy foods. I also love mac’n’cheese…so this recipe is pretty much the holy grail of the two. It is a fast easy dinner plus with enough for leftovers the next day. (I am all about leftovers for lunch throughout the week!)
Chicken Stew Recipe
Chicken Stew– so I only have one listed. But this particular recipe is on the list for a reason! It’s not only a super easy one-dish meal but its healthy and loaded with veggies. Perfect for those chilly days or even lazy cook days.
